al fresco Grilled Chipotle Chorizo Chicken Sausage & Shrimp Kabobs

Serves: 6

Prep/Cook Time: 30 minutes

Ingredients

1-12oz pkg al fresco Chipotle Chorizo Chicken Sausage sliced on bias 1/2″ thick

1 lb shrimp, deveined

1 cup pineapple, fresh, 1″ chunks

1/2 green pepper, cut into 1″ pieces

1/2 red pepper, cut into 1″ pieces

1/2 orange pepper, cut into 1″ pieces

1 zucchini, small, cut 1/2 diameter slices

2 tbsp olive oil

Lime Marinade

Fresh juice from 2 limes

1 jalapeno pepper seeded, cut into chunks

5 cloves garlic, fresh

2 tbsp olive oil

1/4 tsp paprika

1/4 tsp cumin, ground

1/4 tsp salt

1/2 tsp black pepper

2 tsp sugar

Puree all ingredients in food processor

Instructions

  1. Combine olive oil & peppers. Coat well and grill for 5-7 minutes.
  2. Slide one piece al fresco Chipotle Chorizo Chicken Sausage onto skewer followed by pineapple, green pepper, shrimp, orange pepper, zucchini, and red pepper. Repeat until skewer is full. Marinate in lime marinade, refrigerated for 1 hour.
  3. Grill over a medium high flame, baste skewers with any free lime marinade. Grill 5-7 minutes per side or until shrimp turn opaque in color.
  4. Serve over couscous or rice.

al fresco Chipotle Chorizo Chicken Sausage with Mango, Pineapple Salsa

Serves: 6

Prep/Cook Time: 20 minutes

Ingredients

1-12oz pkg al fresco Chipotle Chorizo Chicken Sausage

1 tbsp Extra Virgin Olive Oil

2 tbsp Dry Sherry

1 cup Fresh Mango, 1″ chunks

1 cup Fresh Pineapple, 1″ chunks

1 1/2 cups Fresh Salsa

1/2 cup Edamame, shelled

1/2 cup Black Beans, rinsed

3 cups Jasmine Rice, cooked

1 tbsp Fresh Cilantro, chopped

Instructions

  1. Slice the al fresco Chipotle Chorizo Chicken Sausages on the diagonal, 1/4″ thick.
  2. Heat a 12″ skillet with olive oil over high heat. Quickly saute the Chicken Sausage slices for 2 minutes, add the dry sherry and cook 2 more minutes.
  3. Toss in the mango and pineapple and saute for 2-3 minutes. Add the fresh salsa, edamame and black beans, continue to cook for 2-3 minutes to heat through.
  4. Mix the chopped cilantro with the Jasmine rice. Spoon the cooked sausage and mango, pineapple salsa over the rice.
  5. Serve immediately.

al fresco Cuban Beans and Rice with Chipotle Chorizo and Mango Chicken Sausage

Serves: 6

Prep/Cook Time: 15 minutes

Ingredients

12 oz al fresco Chipotle Chorizo Fully Cooked Chicken Sausage, sliced on the diagonal 1/4″ thick
2 Tbs Extra virgin olive oil
3/4 cup White onion, chopped
2 cloves Garlic, minced
1/2 Jalapeno, finely diced
3/4 cup Red bell peppers, chopped
1/2 tsp Cumin
1/2 tsp Salt
1 tsp Ground black pepper
3 1/2 cup Brown rice, cooked
1 cup Canned black beans, rinsed and drained
1 cup Canned pinto beans, rinsed and drained
1/2 cup Low sodium chicken broth
1/4 cup Cilantro leaves

Instructions

  1. Heat olive oil in a 12″” skillet over medium high heat. Saute onion, garlic, jalapeno and red pepper for 3-4 minutes.
  2. Add al fresco Chipotle Chorizo & Mango slices to the skillet and saute for an additional 2 minutes. Stir in the cumin, salt and pepper, cook 1 minute.
  3. Add the cooked brown rice, black & pinto beans, toss with a spoon. Pour in the chicken broth, sprinkle in the cilantro. Cook for 5 minutes or until the rice and beans are heated through.
