These pigs, of the Iberico breed, are discriminating, discerning gourmets. They crack open the acorns and chomp the oil-rich kernel, discarding the shells. Curious and not unfriendly, they snuffle at your boot to see if it’s edible or nudge at the wagging tail of a puppy. Once a field is well picked over, the honcho hog leads the herd to greener pastures, leaving a few stragglers rolling in the clover. The exercise from a free-range lifestyle contributes to the quality of the meat.”*
