“In Hispanic cuisines, many authentic dishes call for specialty cuts of meat such as marrow bones, oxtails, tongue and inside skirt steak. The Rumba line of beef products, based in , Kan., is launching in several Metroplex Carnival supermarkets this month. It offers these sometimes-hard-to-find cuts, often prized by chefs — as well as heart, kidneys, liver, tripas intestines, sweetbreads, cheek meat, scalded and honeycomb tripe, cross-cut hind shank, flank steak and short ribs — packed fresh.”
