“In Hispanic cuisines, many authentic dishes call for specialty cuts of meat such as marrow bones, oxtails, tongue and inside skirt steak. The Rumba line of beef products, based in Wichita, Kan., is launching in several Metroplex Carnival supermarkets this month. It offers these sometimes-hard-to-find cuts, often prized by chefs — as well as heart, kidneys, liver, tripas intestines, sweetbreads, cheek meat, scalded and honeycomb tripe, cross-cut hind shank, flank steak and short ribs — packed fresh.”
