“Theres no shortage of steaks, chops, hamburger and chicken breasts at the full-service butchers shop at Central Foods Market in New Bedford’s South End.

But Thomas Tiniguar, a Guatemalan fish house worker standing at the meat counter Tuesday afternoon, is buying something else: tripe.

Tripe, or the inner lining of a cows stomach, is the kind of Old World food you used to see in American supermarkets. Today, however, you have to look hard for it unless youre in an ethnic market like Central Foods.”
