Squash season

“”I love squash,” said chef Freddy Sanchez of Adobo Grill, an upscale Mexican restaurant with locations in Indianapolis and Chicago. “I don’t think people use them as much as they should. I always use it on the menu.”

Sanchez is currently featuring a smoky butternut squash soup, a vegetable enchilada and a stuffed chicken breast, all made with the versatile vegetable.

“What I like about squash is it’s simple to work with,” he says, “and it works very well with moles and the spicier sauces.”"
