“Hispanic supermarket chains are zeroing in on Colorado, as the state’s Latino population continues to soar and its members demonstrate increased spending power.

At least three out-of-state grocery chains are opening five stores and are planning more. Many of those stores will occupy vacant big-box sites, potentially bringing a renewed source of revenue and vitality to struggling shopping centers.

“The world has kind of woken up to Denver,” said Carlos Camacho, a Littleton-based food broker.”
