“If you’ve ever watched Chicago chef Rick Bayless on a television cooking show or read one of his cookbooks, you know his dedication to authentic Mexican cuisine. Realizing that many home cooks can’t always keep up, Bayless has turned to a simple, easier cooking style in his new cookbook, “Mexican Everyday” (W.W. Norton & Company, $29.95). “I wanted to make recipes in the style I cook at home, and I have a family of three,” Bayless says. “When I’m cooking for the family and short on time, I’m not making five dishes.”"
