“Citing figures on the growth of the Hispanic population in the area, Eduardo Martinez is betting he can make a go of the bakery he bought on Willow Street three weeks ago.
“There are plenty of restaurants here, but we need some good Spanish bakeries,” said Martinez, 49, a former information technology worker of Cuban descent.
Hispanic-owned businesses grew at three times the national rate for all companies from 1997 to 2002, according to data from the Census Bureau. Hispanics owned nearly 1.6 million businesses in 2002, a 31 percent increase from five years earlier. Waterbury has more than 27,000 Hispanics — about a quarter of the town’s population — according to data from the Connecticut Economic Resource Center.”
