“Bags of corn sit soaking in tubs of lime juice waiting to be ground into masa and rolled out into one of the 10,000 tortillas produced at Burley’s La Raza Tortilleria each week.

Raquel Chavez, who runs La Raza Tortilleria, says it is back-breaking work for the four employees, but business is good. Her customers, mostly Hispanics, flock to buy the fresh tortillas sold only through the factory store.”
