“Polvorones are Spanish shortbread cookies that are so delicate and crumbly their name is derived from polvo, the word for dust. They are so fragile that pastry shops in Spain often sell them individually wrapped in tissue paper. They can be flavored with nuts, anise, brandy, lemon and/or cinnamon. Traditionally, polvorones were made with lard, but butter is the preferred ingredient today.
We were clued into polvorones by readers responding to a request from A.S. of Miami for a recipe to make the cookie her grandmother, from Madrid, made for Christmas. The cookie A.S. remembered was made with hazelnuts and brandy….”
