In 1994, chef Douglas Rodriguez, the self-proclaimed king of Nuevo Latino cuisine who gave the food trend its moniker, opened Patria in New York City. Since then, the trend has taken off, and now restaurants featuring Nuevo Latino cuisine can be found across the country. The cooking style that began in Miami has been given several names, including “New World” or “Global Cuisine,” but Nuevo Latino seems to have stuck.
According to the Web site nuevo-latino.com, South and Central American cuisine differs from traditional Mexican food in its sweeter flavors, the use of plantain as a staple, greater use of tropical fruits and root vegetables and less reliance on tortillas and tomato-based salsas.
